Of course we had to have this one\u2026 built on the famous song, we started with parsley, sage, rosemary and thyme, then took a right turn and tossed in some lemon zest, salt, and a few chiles to add depth.<\/p>\n

\nIt is best to salt meat from 4 to 24 hours before cooking. Do this by letting it \u201csnow\u201d on the meat, then refrigerate. \nAfter cooking, let the meat rest before cutting for about 1\/3 of the cooking time. (Ie. Cook for 9 minutes, rest for at least 3 minutes before cutting.)<\/p>\n
